Lemon-Dill Butter Chicken & Cucumbers
INGREDIENTS:
- 4 boneless, skinless chicken breast halves
- 1 medium lemon
- 3 tablespoons of butter
- 1/2 teaspoon of dried dill (but I use the dill in the tube from the previously mentioned post)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 & 1/2 cups coarsely chopped cucumber
- Preheat broiler. Place chicken on the unheated rack of a broiler pan. Broil 4 to 5 inches from heat for 12 to 15 minutes or until no longer pink (170 degrees F), turning once halfway through broiling.
- Meanwhile, finely shred 1/2 teaspoon peel from the lemon. Cut lemon in half, squeeze lemon to make 2 tablespoons juice.
- In a small skillet, melt butter over medium heat. Stir in lemon peel, lemon juice, dill, salt and pepper. Stir in cucumber. Cook and stir over medium heat for 3 minutes or just until cucumber is tender. Spoon sauce over chicken.
